I have mentioned homemade almond milk here and here before and thought I would share the recipe today. It really is so easy to make. I use a 1:3 ratio, one part almonds, three parts water. If you want it more or less creamy you can play with your ratios. I have probably tried every variation on this recipe. I have added honey, dates, salt, and maple syrup, I have not soaked the almonds, used less water, and all to come to the final recipe that works for me. I used cheesecloth for a long time and just bought a jelly strainer which I find much easier to use.

Almond Milk Recipe

Soak 1 cup of raw organic almonds over night. Drain and rinse. Place the almonds and 1 cup of water in a blender and blend until frothy. Slowly add in two more cups of water until well blended. I usually let it sit in the blender for ten minutes or so just to leach more out of the almonds and then blend again but you can omit this step. Pour almond mixture through a cheesecloth lined strainer, nutmilk bag or jelly strainer and let drain into a bowl. Squeeze the remaining liquid into the bowl and pour into jar. Keep refrigerated for one week. (save the almond pulp to make granola bars, recipe to come)

Tips:  The type of almonds make a difference. I buy organic raw almonds from the farmer’s market and the taste is much better than store bought. Soaking makes a big difference. It really does make it more creamy. Soaking with ground almonds should only be for a short time as it will make it bitter. I read that adding a pinch of salt will help prolong its shelf life but I did not find this to be true. It usually only lasts for one week and starts to sour. Write the date on your jar to gauge. If you like it on the sweeter side add a medjool date or two.

Smoothie Recipe #1

Peel bananas and break into 3″ chunks. Put in a container in the freezer. Use one banana per person and place chunks in blender with homemade almond milk. Blend until smooth.

Smoothie Recipe #2

Add a frozen, peeled banana to blender (or unfrozen ripe banana) with frozen berries of your choice (I used blueberries and raspberries), plain yogurt, homemade almond milk and a spoonful of almond butter. Blend, pour and enjoy.

Tips: Play around with ratios. I never measure, I just drop into a blender.

I am extremely attracted to colorful things and I find it fascinating to read about color theory and history. Recently, I acquired a new book that I’m excited to read, Color, A Natural History of the Palette by Victoria Finlay.

I realized that I now have several books dedicated to color.

It has been warm and sunny here and our magnolia tree is in full bloom.  I caught a man in front of our house looking up at it yesterday. He asked me if it blooms like this every year. Yes, it does.
